Where do the fish from Armatore’s 4ROTTE line come from?
All fish come exclusively from the Mediterranean Sea, FAO area 37, caught with full respect for seasonality and marine biodiversity.
How are the preserved fish processed?
Each fillet is carefully hand-selected and processed one by one, gently steamed or boiled, then preserved either in olive oil or in its natural state.
What is the difference between the various species (mackerel, bonito, little tunny, amberjack, albacore, swordfish)?
Each species has its own flavor, texture, and fat content. Mackerel is bolder, amberjack more delicate, bonito intense, albacore elegant, swordfish meaty, little tunny more rustic, and alletterato well-balanced. The belly (ventresca) is the finest and most tender cut.
