A “sea ragù” with tuna, vegetables, and tomatoes. Flavorful, balanced, and surprising.

Tuna Bolognese is a seafood reinterpretation of the classic Emilian recipe: made with selected tuna, sautéed celery-carrot-onion, tomatoes, and time. The result is a hearty, healthy sauce, full of flavor but without meat.

Perfect with both short and long pasta shapes.

FAQ – Armatore Fish Sauces: natural and preservative-free

Do Armatore ready-to-eat sauces contain preservatives, colorings, or thickeners?

No. All our sauces – Tuna Bolognese, Tuna Genovese, Puttanesca di Mare, and Anchovy Marinara – are completely natural. We do not use preservatives, colorings, or artificial thickeners: only genuine, high-quality ingredients.

How are the ready-to-eat sauces preserved without added preservatives?

Thanks to an innovative thermal sterilization process, our sauces naturally keep for a long time. This method ensures food safety and freshness without the need for chemical additives.

What type of fish is used in Armatore sauces?

We use only selected Mediterranean fish: little tuna for the Tuna Bolognese and Tuna Genovese, salted anchovies for the Marinara and Puttanesca, all processed by hand in full respect of coastal tradition.

What makes Tuna Bolognese unique compared to a traditional ragù?

Tuna Bolognese is a lighter, more Mediterranean version of the classic ragù: instead of meat, we use Mediterranean little tuna combined with tomato, fresh vegetables, and extra virgin olive oil.

Does Tuna Genovese follow the traditional Neapolitan recipe?

Yes. Tuna Genovese is inspired by the original Neapolitan recipe but reinterpreted with Mediterranean little tuna and anchovy extract. Slow cooking and natural ingredients deliver an intense and enveloping flavor.

Is Puttanesca di Mare different from the classic puttanesca?

Our Puttanesca di Mare uses yellow cherry tomatoes, Mediterranean little tuna, salted anchovies, olives, capers, and anchovy extract: a unique version that enhances authentic sea flavors with a gourmet touch.

What ingredients characterize Anchovy Marinara?

It is a simple yet rich Mediterranean sauce: tomato, salted anchovies (20%), capers, extra virgin olive oil, anchovy extract, garlic, and oregano. A recipe that enhances the maritime tradition in a contemporary way.

Are Armatore sauces ready to use?

Yes, just open the jar and gently heat the contents. They are ideal for dressing pasta, crostini, rice, or enriching gourmet dishes with no further preparation.

How long do Armatore ready-to-eat sauces last?

Thanks to the thermal sterilization process, the sauces retain their quality and flavor for many months. Simply store them in a cool, dry place. Once opened, they should be consumed within a few days.
